First time my roommate BAKED potato fries for me, I was dumbfounded… The potato fries that is universally liked but considered somehow unhealthy…can be baked instead of deep fried?!

Previously I have a few failed trials on baking fries, this time I finally succeeded and would like to share my failure and my success through this simple, easy recipe.

  • check on fries after 25 mins and adjust 1st baking time
  • chill and PUT BACK to bake for 10 mins to have “deep fried” crispy texture
  • chill again before serving so tongue is more sensitive to spice and fries are even more crispy

RECIPE

  • preheat oven to 400 – 425F
  • cut potato into small pieces
  • put in boiling water till semi-transparent; around 4-5 mins dependent on the thickness
    • my roommate use raw potato directly, dry and wipe out as much water as you can. But oh well, it’s quarantine time and I am still short on paper towel (actually, I don’t have any left…)
    • Failed Trial 1 takeaway: if do not wipe, it will take a LOOONNGGG time to bake and fries will be soft and not crispy
  • after boiling, air-dry on baking pan with bigger evaporating surface
    • if use raw potato, skip this step; otherwise, potato will be oxidized and browned (Failed Trial 2 takeaway)
  • marinate with sauce/spice of your choice:
    • salt **
    • pepper **
    • olive oil **
    • garlic powder (A+mazing)
    • coriander powder
    • paprika
  • marinate for 10-15 mins (skip if raw potato, put straight in oven)
  • bake in oven for 25 mins, 400 – 425F
    • potato fries recipes usually bake for 20-40 mins dependent on size; so check on the fries around 25 mins to adjust baking time
  • remove before fries are burnt, and when fries are coating with a “golden” layer; it is still soft especially when hot
  • chill for 10 mins
  • put back in oven for 10-15 mins 400 – 425F, now the fries should be more brown and more crispy
    • inspiration from frying popcorn chicken twice
  • remove from oven, chill
    • fries will be crispy after chilling
