It’s summer time and temperature is rising. Cucumber salad is great to cool us down! Cucumber Salad, a classical appetizer, has short prep time, simple ingredients and can help with appetite!


RECIPE

Cucumber:

  • 2 cucumber (for 3-4 people)
  • peel SOME skins off cucumber to create pattern
  • use the back of knife to beat cucumber till open, cut into 4-5 cm chunks
    • OR you can just cut them into small pieces
  • (optional) cut away seeds
peel some skin to create pattern

Sauce:

  • 3-4 clove of garlic chop into paste
  • 1 chili red pepper 小米辣 chop into paste
  • 1 green onion, finely chopped
  • some cilantro, finely chopped
  • 2g salt
    • if you want softer cucumber, add salt into cucumber earlier so cucumber will “dehydrate” and soften
    • if you want crunchy 爽口的 cucumber, combine salt with other sauce
  • 3g premium soy sauce 生抽
  • 1g rice vinegar
  • 20g homemade red chili oil
  • some sesame oil

Mix sauce into cucumber, rest for 5-10mins and serve!
