Last time making lobster was a mess as we were too scared to clean the lobster when they waved their claws at us!! This time the lobsters were quieter when we cooked them, better cleaning, slicing enabled us to cook lobsters in three different ways this time:

  • Cantonese style ginger scallion stir-fried lobsters 薑葱炒龍蝦
  • Steamed garlic lobster tail 蒜蓉蒸龍蝦尾
  • Steamed lobster claws 清蒸龍蝦爪

RECIPE

Clean lobsters:

  • Help lobster urine
  • Divide lobster head from lobster tail
  • Lobster tail:
    • Use scissors to cut open lobster tail’s shell
    • Remove intestine
    • Gently separate lobster meat from the shell
    • Cut one lobster tail into 6 parts for ginger, scallion stir fried lobster; for steamed/baked lobster tail, just leave it.
  • Lobster head:
    • Cut off antenna, and most outside part of lobster legs
    • Use scissors to cut open front and back of lobster head’s shell, then use the knife to cut lobster head into 2 half
    • Remove brain and grills, discard the head’s shell, unless making porridge with shells
    • Cut head into 2-3 parts of each half, clean well and drain water
    • Crack open lobster claws easy for eating later

1st: ginger scallion stir fried lobsters

Parts: lobster tail’s 6 parts, lobster head’s parts

Ingredients:

  • ginger slices
  • scallion slices
  • garlic slices
  • pepper slices
  • corn/potato starch

Procedure:

  • Coat drained and dried lobster parts with corn/potato starch, make sure all the meat/shell connection parts are covered with starch so the water and moist will be locked inside lobster once got in hot oil
  • Heat up oil on high temperature, when bubbles pop on wooden chopstick in hot oil, ready to fry!
  • Fry lobster parts in hot oil for 30secs -1min, till lobster shells become red
  • Stir fry garlic slices, pepper slices in oil, then add and fry ginger slices and scallion white parts
  • Put in fried lobster parts, + rice wine, salt, spoonful of OYSTER SAUCE
  • Add boiled water, cover pot with lid and cook for 2-3mins
  • Pour over starch water and final stir till dried 勾芡收汁

READY TO SERVE!


2nd: Steamed garlic lobster tail

Parts: lobster tail

Ingredients:

  • 10g butter
  • 1 whole garlic
  • salt
  • scallion

Procedure:

  • Season lobster tail with salt
  • Over med-low heat, melt butter, fry 1/2 whole garlic till golden
  • Mix 1/2 fried garlic and butter with the 1/2 rest raw garlic
  • Place garlic mix onto lobster tail
  • Steam till lobster turns red

3rd: Steamed lobster claw

Dipping sauce:

  • hot oil poured over ginger, garlic and scallion chunks
  • add in salt and soy sauce
