Craving for Korean BBQ after not having it for more than 1 year in pandemic and celebrating a friend receiving multiple offers, we decided to have KBBQ AT HOME!! One must-have ingredient besides pork belly, bulgogi is beef short ribs (LA Galbi)!! Its slight sweetness is the key of sauce, following Maangchi’s recipe, I was able to replicate the sweetness, softness of LA Galbi!!

RECIPE

  • 2-3lbs flanken cut beef short ribs
  • 1 Asian pear (can substitute with 1 kiwi + 1 apple or 2 ripe pears)
  • 1 medium onion (yellow or white onion)
  • 1 whole garlic
  • 1tsp ginger (1 small chunk)
  • 1/3 rice wine/water
  • 1/3-1/2 soy sauce
  • 1/4 honey or 1/3 brown sugar
  • 1tsp ground black pepper
  • 2tbsp sesame oil

Step 1: wash beef short ribs in cold water, rub off broken bones, then rest beef short ribs in water for a few hours to get rid of blood and dirt

Step 2: dry beef short ribs (can use paper towel, or just let them rest in sieve for long time)

  • when the water/moist in beef short ribs are lost, they are better at absorbing yummy sauce later!

Step 3: in a blender, blend the following ingredients till smooth and “liquidy”:

  • 1 Asian pear (can substitute with 1 kiwi + 1 apple or 2 ripe pears)
  • 1 medium onion (yellow or white onion)
  • 1 whole garlic
  • 1tsp ginger (1 small chunk)

Step 4: add the following ingredients in blender and pulse a few time to mix:

  • 1/3 rice wine/water
  • 1/3-1/2 soy sauce
  • 1/4 honey or 1/3 brown sugar
  • 1tsp ground black pepper
  • 2tbsp sesame oil

Taste the sauce and adjust seasoning, it might be slightly sweet; don’t worry about the strong spicy taste from raw garlic/onion 🙂

Step 5: place beef short ribs in marinating container, add sauce and massage them on beef short ribs; one layer beef short ribs, one layer sauce.

Step 6: marinate in fridge for at least 4 hours, at best overnight!!

Step 7: over medium-high heat, add marinated beef short ribs and cook each side for around 1 min! Cut beef short ribs into bite size. Can eat them with cabbage, sesame/perilla leave as wrap or just straight up enjoying them!!
