Whenever I visited my parents’ friends who are from the Hakka area of Southern China, they always cook stuffed tofu (will try and share recipe later) and stuffed green peppers. I think this is not only a well-loved dish in Hakka, but also in many other areas in China! If you want to cook green peppers in new ways, try this simple and yummy recipe!

RECIPE

  • 8 green peppers
  • 50-80g ground pork
    • 1tbsp soy sauce
    • 1tsp oyster sauce
    • 1tsp salt
    • 1tsp white pepper powder
    • 1tsp five-spice powder
    • 1/2tbsp sesame oil
    • 1 shallot, minced
    • 1 scallion, minced
    • 1tsp garlic, minced
    • 1tsp ginger, minced
  • sauce:
    • 1/4 cup water
    • 1tbsp soy sauce
    • 1tsp dark soy sauce
    • 1tsp sugar
    • 1tsp oyster sauce

Step 1: in 50-80g ground pork, add 1/4 cup of water, stir in one direction till all water is absorbed. This step makes ground pork tender and moist.

  • can also add ginger/scallion water 薑葱水 from water with chopped scallions, ginger slices, 1tsp Szechuan pepper, 1 star anise resting in it for10-15mins

Step 2: in ground pork, add in the following seasoning ingredients (can skip shallot, scallion, ginger and garlic):

  • 1tbsp soy sauce
  • 1tsp oyster sauce
  • 1tsp salt
  • 1tsp white pepper powder
  • 1tsp five-spice powder
  • 1/2tbsp sesame oil
  • 1 shallot, minced
  • 1 scallion, minced
  • 1tsp garlic, minced
  • 1tsp ginger, minced

Step 3: wash green peppers, slice in half and remove seeds

Step 4: stuff green peppers with seasoned ground pork

Step 5: over medium-high heat, add oil in pan cook green pepper with meat side facing down, till meat looks golden/brown

Step 6: flip stuffed green peppers so the green pepper side face down, lower to medium heat, cook till there is tiger skin (burnt spots)

Step 7: in a bowl, mix 1/4 cup water, 1tbsp soy sauce, 1tsp dark soy sauce, 1tsp oyster soy sauce and 1tsp sugar, pour in pan, cook over medium heat for 2mins with lid on

Step 8: take off lid, turn up heat till almost no sauce in pan; the remaining sauce will be used to pour on plated stuffed green peppers. Remove everything from pan and plate!
