Have been wanting to camp for a while and decided to start out with glamping. “If you start with glamping, you will never reach camping”, friends told me. What I look for in a camping/glamping trip is the immersion with the nature, waking up to the bird chirping/singing, listening to the rain drops on tent while chilling, reading in tent, enjoying beer or hot tea and smell the grass after rain… I achieved some in Mendocino this time, and hope to achieve other “dream” of camping in the future. As my first glamping trip, Mendocino Glamping was unexpectedly healing and energizing, a great break from work and recent travels.

Time to diversity salmon cooking! After all, two most common ways I cook salmon are nothing surprising: raw as sashimi or poke bowl, cooked as baked / air-fried. Finding Florentine recipe, my main concern is would this be too… creamy and greasy? and cover the fresh taste of salmon? Luckily I found a recipe that use coconut cream and vegetable broth; coconut cream indeed made me feel like eating “healthier” and added extra fragrance, flavor. As I have never had salmon Florentine before, I finally experience what the Great British Bake Off bakers feel like in their technical challenge: what on earth am I making and what is it supposed to taste like?? Truth is, we like it and we will try it in restaurant, or all the way, in France.

I went to Chinese BBQ restaurant, I had spicy grilled eggplant for the first time. I don’t know how to cook many eggplant dishes as they usually taste mushy, but as my chopsticks kept scoping out that grilled eggplant, I knew I have to learn how to make it and also, diversify my veggie cooking.. and show others who don’t like eggplant that it could be tasty, if cooked right!

Honestly I have never had this dish back home in China, I think this is a northern specialty? There are different ways to cook cold noodles, one of the most famous is sesame noodles, the subtle flavor of sesame and the numbing spice make you sweat but at the same time hard to stop slurping noodles down your throat. Similarly, today’s cold noodle with scallion oil is another irresistible dish, especially in the hot summer!

Different areas might cook the combination of potatoes and chicken in different ways. In Korea, this could be spicy chicken stew. In China, people from Xinjiang cook them as Big Pan Chicken (大盤鷄), southern Chinese / Cantonese cook them with scallion, ginger, garlic, areas that can take spice would add jalapenos like this recipe. As I try to decrease red meat intake and cook as many chicken and fish as possible, I am also trying new recipes for chicken. As a chicken and potato lover, I am sharing this recipe as a new addition to my “menu”!

Savory Butter Cookies, with scallion or other ingredients, are quite common in my childhood, especially when dad really craves for cookies while mom didn’t have a sweet tooth (she does NOW 😉 ), savory cookies is the neutral ground for the family. I got addicted too them and now homesick for them. Even when I try to avoid having sweets and slow down baking lately, just watching others’ post of savory cookies with scallion made me have a tinkling feeling and hidden crave for my 葱香小餅乾~
