Very, very classic Teochew / Hokkien dish you can find on the street stand, restaurants or home cooking! It has different ingredients and texture as Korean seafood pancake, and its dipping sauce is just good old simple fish sauce. Only two key ingredients are needed for this classic dish – FRESH oysters, and sweet potato starch! Texture-wise, if you want crispy texture like the Korean seafood pancake or scallion pancake, you can use corn starch + baking power + baking soda instead.


RECIPE

  • oysters (can from Costco)
  • sweet potato starch
  • scallions or chives, sliced
  • ground black pepper
  • salt
  • egg
  • fish sauce

STEP 1: wash oysters and chopped scallions/chives into slices. Mix sweet potato starch and water till all the starch is dissolve and the mixture is flowing smoothly

STEP 2: in a bowl, add oysters, scallions or chives, 1tsp ground black pepper, 1tsp salt, 1tbsp fish sauce, 1 egg together, mix well

STEP 3: add sweet potato starch mix to the bowl, mix well. Add more starch or water as needed so the pancake mix is also flowing smoothly rather cloggy

STEP 4: heat oil on pan, till smoke rises which means the pan is hot enough now. Slowly, pour the pancake mix from the center, cook over medium-high heat till one side has become golden and crispy. Carefully flip to the other side and cook till golden and crispy

STEP 5: slide oyster pancake on a pan, sweet and easy! Serve fish sauce as dipping sauce on the side
