Seaweed is believed to be able to lower cholesterol level, provide protective antioxidants, along with other benefits described here. Besides making Korean beef seaweed soup, I decided to cook pork short rib soup with corn and seaweed. The video attached shared many tricks on how to make the rich broth from pork short ribs and get rid of the stickiness, fishiness of seaweed and I have translated those tricks in the QUICK TAKEAWAYS section; they apply to other soup dishes with pork, seaweed as well!

RECIPE

  • 1-2lb pork short rib
  • dry seaweed
  • 2 corns

Step 1: dip pork short rib in cold water for 2 hours to get rid of blood, dry seaweed in cold water for 1 hour to bloom

Step 2: cook pork short ribs in cold water till water boils and becomes foamy. Remove pork short ribs and rinse of dirt

Step 3: over medium-high heat, add oil and stir fry pork short ribs in pot till golden, no need to add ginger, garlic or scallions

Step 4: 3 UP 3 DOWN: add hot water to cover pork short ribs, stir and add cold water, stir till boil; add cold water one last time, stir till boil. Transfer to clay post

Step 5: in the pot, boil water with ginger slices, rice wine; add sliced seaweed, cook till water boils and keep cooking for 2mins. Discard water, rinse seaweed in cold water and dip in cold water

Step 6: add seaweed and corn, cook over medium-high heat for another 20-30mins, taste and season with salt and soy sauce
