Honestly I have never had this dish back home in China, I think this is a northern specialty? There are different ways to cook cold noodles, one of the most famous is sesame noodles, the subtle flavor of sesame and the numbing spice make you sweat but at the same time hard to stop slurping noodles down your throat. Similarly, today’s cold noodle with scallion oil is another irresistible dish, especially in the hot summer!

RECIPE

(1-2 portions)

  • 2 stems of scallion, cut into chunks
  • 1-2 jalapenos (the more the merrier???)
  • half garlic, minced
  • 1-2tbsp sesame
  • 1-2tbsp pepper flakes 辣椒麵(e.g. 雲南的丹山沾水)
  • 1tbsp oyster sauce
  • 1tbsp soy sauce
  • 1/2tbsp dark soy sauce
  • 1tsp sugar (OPTIONAL)
  • cilantro chunks

STEP 1: cut scallion into chunks, mince garlic, chop jalapenos and cilantro

STEP 2: put minced garlic, minced jalapenos, white sesame and pepper flakes in a bowl

STEP 3: over low-medium, heat up 1/4 to 1/2 cup of olive oil. When there is small bubbles formed in the oil, start frying the scallion chunks till brown and crispy

STEP 4: boil water, cook noodle according to instruction / soften till breakable. Can also boil other veggies if needed such as wooden ear mushrooms, spinach, etc. Dry and chill on the side.

STEP 5: when scallion oil is done, remove scallions, pour hot oil over the bowl with four spices from step 2. Mix well!

STEP 6: add in 1tbsp oyster sauce, 1tbsp soy sauce, 1/2 dark soy sauce, 1tsp sugar (OPTIONAL), cilantro chunks into scallion oil bow. Mix well.

STEP 7: add in cold noodle and veggies. Mix well.

I feel very accomplished mixing cold noodles in a BIG, STAINLESS STELL bowl, that’s feel of home~ instead of fancy ceramic bowls, yummy, home-made dishes are USUALLY served in simple, “ugly”, homey stainless steel big bowls.
