Not sure what I should call this toast with spinach, baby bella (any mushroom), cheese and ham, but I heard it looks GORGEOUS and tastes AMAZING!

STEP 1: whisk 1 egg, dilute with a few tbsp milk, add a pinch of salt

STEP 2: sautรฉ baby bella, season with salt and pepper; sautรฉ spinach

STEP 3: cut 1 slice of toast into half, set aside

STEP 4: over low-medium heat, add oil to a heated pan, space out the egg so it covers the whole pan

STEP 5: quickly put the two pieces of toast on the pan, and flip them to the other side, leaving 1-2 inch space in between; dipping in the egg first before egg is fully cooked so when we fry it on the other side later, the toast would be golden and crispy

STEP 6: as the egg is almost cooked, quickly use a spatula to flip both the egg and toast, so now toast is at the bottom and egg is on top

STEP 7: layer on egg: cheese (first so it’s closest to the hot pan and thus start to melt), mushroom, spinach, meat of choice

STEP 8: use the spatula to fold the egg on edges back onto the ingredient tower, like folding a blanket

STEP 9: fold one piece of the toast onto the other pieces, fry both sides till toast surface is golden and crispy and the cheese is melting

REMOVE AND SERVE!
