It’s summer time and temperature is rising. Cucumber salad is great to cool us down! Cucumber Salad, a classical appetizer, has short prep time, simple ingredients and can help with appetite!
RECIPE
Cucumber:
- 2 cucumber (for 3-4 people)
- peel SOME skins off cucumber to create pattern
- use the back of knife to beat cucumber till open, cut into 4-5 cm chunks
- OR you can just cut them into small pieces
- (optional) cut away seeds

Sauce:
- 3-4 clove of garlic chop into paste
- 1 chili red pepper 小米辣 chop into paste
- 1 green onion, finely chopped
- some cilantro, finely chopped
- 2g salt
- if you want softer cucumber, add salt into cucumber earlier so cucumber will “dehydrate” and soften
- if you want crunchy 爽口的 cucumber, combine salt with other sauce
- 3g premium soy sauce 生抽
- 1g rice vinegar
- 20g homemade red chili oil
- some sesame oil

Mix sauce into cucumber, rest for 5-10mins and serve!
