Housewarming gift for friends who like citrusy and chocolate cake flavors. Thought about making Valencia cake (orange and chocolate flavor) at first, but since I have a jar of fig jam and a box of fresh fig, pivoted to make a fig & chocolate cake instead. However, Fig & chocolate crisp bottom is so “chocolate” heavy, completely covering the fig flavor, I decided to make the other layers fig flavor rather than chocolate + fig flavors, and only have a mirror glaze of pure chocolate flavor.

Friend sent me a tiktok video with scallion croissants, as someone who loves scallion steam bun, scallion pancake and of course meat floss, I decided to recreate the scallion croissants with meat floss. Thanks to multiple croissant trials at pandemic, I was able to leverage the Weekend Bakery croissant recipe and came up with the recipe to combine my favorite flavors with my favorite pastry texture.

Mango sticky rice has always been a dessert I love to order in Thai restaurants, but guilt by the sugar level it has… this time I tried to make mango sticky rice in a healthy way, with low-fat coconut milk, monkfruit sweetener and toasted green beans! The toasted, crispy green bean adds an extra texture to the soft sticky rice and mango.

Baked babka quite a while ago, made me wanna bake toast, the soft toast that still attaches to each other as you tear down a piece. There are so many flavors available, from Asian toasts like scallion & meat floss, red bean & coconut custard, sesame, to western toasts like ham & cheese! Still improving my toast making skills, but after 4 toasts, I tend to believe in using this recipe.

Friends made home-made pineapple jam, we also happened to have passionfruit jam from Costco, so decided to make a summer flavor cake in the spring! The passionfruit chiffon cake is very refreshing, in combination with the slightly sour passionfruit + pineapple jam to cancel out the guilt of enjoying cream!

It’s holiday season! Getting all whimsical about cakes with various flavors. I have never made strawberry jam before, so making the jam from scratch today to add flavors to my strawberry vanilla chiffon cake for a friendsgiving potluck! Gotta say the decoration did not go as expected.. it honestly rarely does.. ha

Matcha, Coconut and Red Bean are pretty common Asian dessert flavors. I have made a chiffon version of matcha, red bean cake with coconut frosting for friend’s engagement, decided to try to mousse cake version as well. Since I have never made a mousse cake before, decided to try for end of the year drink night with friend. The first try surprisingly still came out not bad! Except for the soggy bottom…

Having Malaysian Cooking Night with friends and decided to contribute a pandan cake roll to the group. To add more elements (flavors, textures, etc.) to the cake roll, I make two different flavors’ cake roll and whipping cream – Ube and Pandan, two classic south Asian flavors, also made coconut jelly for the first time! I guess the GBBO 2022 is coming to an end, I am again inspired to bake more!
