Parents bought me tofu skin from home, its quality is much softer, fresher and sweeter. I have been looking for a variety of ways to cook tofu skins. At home, mom makes tofu skin with pork short ribs and I found that tofu skin really matches well with pork. The first time she made it, I did not expect tofu skin to be THIS SWEET & DELICIOUS… This time I tried making it with minced pork. The light, subtle sweet flavor from tofu skin works well with the more intense sweet-flavor minced pork!

RECIPE

  • 1lb pork belly
  • 1-2 shallots
  • 8-10 shiitake mushrooms (if use dried shiitake mushroom, put in water for 30mins-1hr)
  • 1 scallion
  • few ginger slices
  • 2-3 star anise
  • 3-5 bay leaves
  • tofu skin (put in water for at least 30mins)
  • hard boiled eggs
  • 2-3tbsp soy sauce
  • 2-3tbsp dark soy sauce
  • 2-3tbsp cooking rice wine
  • 4-5 sugar cubes

Step 1: cut pork belly into slices, stir fry in hot pan till golden and almost crispy. No oil is needed in this step, pork belly fat should be enough

Step 2: slice shallots into cubes, fry in fat from pork belly till crispy; get shallot crisps out, discard 90% fat.

Step 3: stir fry ginger slices, scallion slices, star anise and bay leaves till fragrance comes out

Step 4: cut shiitake mushrooms into slices, stir fry in pan till fragrance comes out

Step 5: add in shallot crisps and golden pork belly, stir fry

Step 6: add in hard boil egg, water from hydrating shiitake mushrooms or plain water till just covers ingredients; add in soy sauce, dark soy sauce, rice wine and sugar cubes

Step 7: bring to boil and taste if flavor is enough; then turn down heat to medium, cook for 30mins

Step 8: slice tofu skin into small chunks, add in pan after 30mins cooking; cook for another 5-10mins

Step 9: taste test, if not salty enough, add soy sauce or salt.
