Singapore Noodle is a classic dish in south east Asia, it is also a must-have on menu of Hong Kong / Cantonese cafe 茶餐厅.. just like curry chicken 咖喱鸡,white / red sauce over chicken steak, pork chop 白汁/红汁鸡排/猪排. With pre-made Singapore noodle mix, it is much more easier to replicate this delicious dish!
RECIPE
4-6 portions
- ~200g dry rice noodle
- minced garlic
- minced shallot
- dried shrimp
- protein of choice:
- chicken
- pork belly
- clam or other seafood
- sliced mushroom (shiitake or other mushrooms)
- sliced wooden ear
- shredded carrots
- eggs
- 1 bag of pre-made Singapore noodle mix (Lee Kum Kee)
STEP 1: soften dry rice noodle in water for ~1hr
STEP 2: mince garlic, shallot, dried shrimp, slice mushroom, carrot and wooden ear, whisk 2+ eggs
STEP 3: over hot pan and cold oil, stir fry dry rice noodle till soften and transparent, remove aside
STEP 4: scramble egg, set aside
STEP 5: stir fry protein of choice, chicken / pork belly / char siu / clam till fragrant
STEP 6: stir fry shallots till golden, add garlic and dried shrimp till fragrant, then add mushroom, wooden ear and carrots
STEP 7: add noodle, and protein of choice, Singapore noodle sauce and mix well
STEP 8: at last, add the scramble egg in
